Not too long ago, I had only a few minutes to make dinner for my hubby and me. I had a container of fresh spinach that I needed to use, some cream and parmesan cheese and voila my 5 Minute Creamed Spinach became one of our new favorites that my husband actually asks for! This is the man who 20 years ago would have been completely fine with NO SIDES, just MEAT! Let me confess I had to make this dish several times to duplicate my first, on-the-fly, creation. But I am happy to say that the recipe below is "The One". I hope you'll give it a go and that your family will love it just as much as we do!
The measurements below served two, but this is super easy to double. This side dish would pair perfectly with a nice steak, grilled or roasted chicken, or your favorite fish dish.
Ingredients
1 Tablespoon olive oil
3 cloves garlic smashed (skin removed)
5 Ounce container of baby spinach
¼ cup heavy cream
¼ teaspoon nutmeg (optional)
⅓ cup Parmesan cheese (or more to taste)
Salt and fresh ground pepper to taste
Directions
Heat oil in a large saute pan over medium-high heat until the oil shimmers.
Add the smashed cloves of garlic and cook for a minute to flavor the oil, not to brown it.
Add all the spinach and cook down until it is wilted, about 2 minutes.
Add the heavy cream and reduce 1 minute over medium-high heat.
Add the parmesan and seasonings to taste.
