BLT Stuffed Cherry Tomatoes

These bite-sized appetizers are ADDICTIVE. Sweet cherry tomatoes stuffed with finely chopped bacon (who doesn’t love BACON?), green onions, parmesan cheese, and mayo. What a delicious combo! Every time I make them, they are devoured in minutes!


I consider these a labor of love, but it is so worth it. And they can be made several hours in advance so if you have guests coming you can put these together earlier in the day and serve when your guests arrive.


Here are a few tips for making these little gems:

  1. I use cherry tomatoes that are round, not oval, and at least an inch in diameter to make scooping the seeds out and stuffing easier.

  2. When scooping out the seeds use the tiniest spoon you have or a mini melon baller.

  3. Slice a sliver off the bottom of the tomato so it won’t roll around the serving platter.

  4. Chop the bacon super finely for easier stuffing into the tomato.

  5. Use a sandwich ziplock bag with the corner cut off to pipe the stuffing into the tomato.


Ingredients:

  • 2 cartons of cherry tomatoes

  • 1 pound bacon fried and finely minced

  • ½ cup mayonnaise

  • ⅓ cup finely chopped green onions

  • 3 Tablespoons Parmesan cheese

  • salt and pepper to taste


Directions:

  • Slice the tops off the tomatoes and carefully scoop the seeds out with mini melon baller.

  • Turn tomatoes upside down and drain on a plate lined with a paper towel.

  • Mix the remaining ingredients in a small bowl

  • Stuff the tomatoes with filling and serve.

  • If not serving immediately refrigerate up to 5 hours in advance.

  • Garnish with green onions and fresh ground pepper if desired.

  • ENJOY!
