Want your family or picky eaters to have salad for dinner? This is for you! Homemade croutons and homemade Ranch dressing are the way to go! I make this dressing for catering events for veggie trays and it's always a hit.
And the croutons you're not going to want to skip. I just had to share this recipe with you that my daughter-in-law gave me years ago from Pinch of Yum they're seriously the best ever! Trust me, once you make them, you'll never want to buy store-bought ones again. I usually put them on my salads, but I have to be quick because my hubby loves snacking on them straight from the baking sheet. Oh, and have you ever tried nutritional yeast? It's a dairy-free and usually gluten-free ingredient that adds a yummy and slightly nutty flavor to dishes. Give it a go!"
Cobb Salad Ingredients (Feel free to add or remove based on your liking)
2 heads of Romaine lettuce, washed, dried, and chopped into bite-size pieces
2 avocados, chopped
Fried bacon (as much as you think you need based on who's eating...my husband will eat 4 pieces before I ever get to the salad)
4 hard-boiled eggs sliced
Grilled chicken breast sliced or diced ham (about 2 cups of either)
4 roma tomatoes sliced
1/2 cup blue cheese crumbles (or grated cheddar or other favorite cheese)
Homemade Buttermilk Ranch Dressing (GOOD ON ANYTHING)
Ingredients:
⅓ cup sour cream
½ cup mayonnaise
1 cup buttermilk
3 green onions finely sliced
1 Tablespoon fresh dill chopped, or 1 teaspoon dried dill
2 Tablespoons chopped parsley
3 cloves of garlic with 1 teaspoon of salt to mash into a paste
1 teaspoon fresh cracked pepper
2 teaspoons worcestershire sauce
2 teaspoons dijon mustard (not yellow)
Directions:
First, make the garlic paste by removing the garlic from the skin then on a cutting board smash with the flat side of a chef’s knife. Add the salt and scrap the garlic into the salt until it becomes a paste.
Add all the ingredients into a bowl and combine well.
Refrigerate until needed. I like to make this at least an hour before serving but you can make it a day or two in advance as well. It will keep for a week in the refrigerator.
Cheezy Garlic Croutons
Ingredients:
I baguette cubed (I like ciabatta bread the best, but french loaf will work as well) you should have about 8 cups
½ cup olive oil
½ cup nutritional yeast
1 teaspoon salt
1 teaspoon garlic powder
Directions:
Preheat oven to 400 degrees
Mix the olive oil, nutritional yeast, garlic powder, and salt in a large bowl
Add the bread cubes and combine well using your hands to massage the mixture into the bread (gently)
Place the coated bread onto a parchment-lined baking sheet and bake for 10 minutes, until crispy.
