Peachy Summer Salad with Goat Cheese

It's summer and peaches are plentiful so it's the perfect time to try out this simple, bright, healthy and may I say delicious salad. Serve it for lunch or as a lovely side salad. OR grill up some chicken breasts, slice and add to the salad for light summer dinner option. The peppery arugula, sweet fresh peaches, creamy tangy goat cheese and bright vinaigrette make this a peachy addition to any meal time. Plus it's so pretty you're family and friends will want to snap a picture before diving in.


Ingredients

  • ¼ pine nuts (or chopped pecans or almonds)

  • ¼ cup olive oil

  • 2 Tablespoons champagne vinegar or white wine vinegar

  • 2 teaspoons honey

  • 5 ounces Arugula

  • 2 ripe peaches, pitted and cut into slices

  • Thinly sliced red onion to taste (optional)

  • ½ cup goat cheese crumbled (more to taste)


Directions

  1. In a small sauté pan, toast the pine nuts (or other nuts) over medium heat until golden brown and set aside.

  2. In a small mason jar add the olive oil, vinegar, honey and salt and pepper to taste. Shake well and set aside.

  3. Plate the arugula in a large shallow bowl or individual serving plates and distribute the peaches, goat cheese, onions, and toasted nuts evenly.

  4. Dress with vinaigrette just before serving.
